I tend to see September as another January 1st situation. I'm getting back into my routine so this is my chance to once again start a healthy eating habit. Which I at least try to keep up with during the week, before happy hours and dinners out rear their heads on the weekends.<br />
<br />
I found this recipe in Everyday Food and was immediately intrigued. I'm not a huge salad fan, but I do have a big love for arugula. I switched up some of the ingredients (thanks Trader Joe's!) and a new favorite was born.<br />

<a name='more'></a>The best part? How easy it was. The recipe serves four, so I had one serving for dinner and then packed three away for the week. And it just got better the longer it sat.<br />
<br />
<b>Arugula, Chicken, and Rice Salad</b> (adapted from<a href="https://martha.zt01.net/EF/1/ef_google/ab/landing/ef_google.php"> Everyday Food</a>)<br />
<i>Serves 4</i><br />
<br />
2/3 cup brown rice, cooked<br />
3 cups mixed fresh basil and parsley<br />
2 tbsp. extra virgin olive oil<br />
2 tbsp. red wine vinegar<br />
coarse salt and freshly ground pepper<br />
5 cups wasabi arugula<br />
7 oz. cooked chicken breast<br />
2 tbsp. chives<br />
1 large zucchini, roasted with salt and pepper<br />
<br />
In a blender or mini food processor, blend herbs, oil and vinegar until roughly chopped, scraping down the sides as needed. Add about a 1/4 cup of water and blend again, until mixture is pourable and smooth.<br />

On a small plate, shred (or chop, whatever you prefer) your cooked chicken breast.<br />

In bowl, stir together rice, chicken, chives, zucchini and remaining dressing. Season to taste with salt and pepper. Scoop about a 1/2 cup of the mixture onto a bed of the arugula.<br />

We had to leave on the Friday before the hurricane since we live on the barrier island, and returned the following week. Katia ate a good chunk of the beach, we were packed in like sardines up there!<br />

Now, school has started, as well as grad school, so it is back to the grind. Once the paycheck starts coming in again, I'll be cooking more, and I'm also taking some knitting classes. <b>Frozen Lemonade Pie - Serves 8</b><br />
<i>(Recipe adapted from <a href="http://www.foodnetwork.com/recipes/neelys/frozen-lemonade-pie-recipe/index.html">The Neelys</a>)</i><br />

<ul><li>1 graham cracker crust</li>
<li>1 14 oz. can sweetened condensed milk, chilled</li>
<li>1 12 oz. container frozen whipped topping, thawed</li>
<li>1 6 fl. oz. frozen lemonade concentrate, keep frozen</li>
</ul><br />
In medium bowl, add chilled sweetened condensed milk and whipped topping. Fold gently. <br />
<br />
Add frozen lemonade and continue to fold gently. Do not let mixture become soupy.<br />
<br />
Pour mixture into pie crust and freeze overnight.<br />

This appetizer is sweet, salty and refreshing. Serve it with a loaf of crusty bread and some wine and you have a light summer dinner!<br />

<ul><li>1 cantaloupe, seeded and either scooped with a melon baller or cut into chunks</li>
<li>3/4 pound bocconcini in olive oil with basil</li>
<li>1/4 tsp red pepper flakes</li>
<li>Coarse salt and ground black pepper</li>
<li>1/3 pound thinly sliced prosciutto</li>
</ul><br />
Put melon balls or chunks into a large bowl.<br />
<br />
Add bocconcini, oil, and red pepper flakes; season with salt and pepper and stir to combine.<br />

Arrange prosciutto along the edges of a large serving platter. As it happened, I was heading down to the family beach house for Memorial Day weekend, and really, who better to be the guinea pigs for my experiment in cake pops than the family?<br />

Given that I was heading to the shore, I figured I'd do a beachy type them. Blue candy coating for water, crushed graham cracker crumbs for sand, covering a vanilla cake mixed with cream cheese frosting.<br />

Delectable, even if they were so not bathing suit friendly.<br />

But let's face it, I'm not exactly an expert. When I go into a liquor store and am confronted with aisles and aisles of wine, I rarely know the difference outside of the price. I have a few go-tos but in my effort to expand my horizons, I'm trying to step outside the familiar bottle.<br />

I generally like red, but lately I've been in the mood for white, so when I went to the store the other day, that's what I was looking for. I wanted to try something new, but had no idea where to begin.<br />

And then I saw this. And thought, hey, if I don't know anything about wine, at least I can go with a pretty label!<br />

<a name='more'></a>Let's get this out in the open. There isn't much I wouldn't do for a good pancake. They are, however, not the healthiest thing in the world, especially when you like them huge and fluffy and drowning in butter like I do.<br />

And since it's summer and I'm trying to be healthy, when I saw this recipe I knew I had to try it. Because while it has flour like regular pancakes, the main ingredient is quinoa.<br />
<br />
A healthy grain! One I've been dying to try since I got a nice bag of it at a local farm.<br />
<br />
And they didn't disappoint. The quinoa gives the pancakes a hearty texture that's a tad nutty and so delicious.<br />

The recipe didn't actually call for fruit, but I had also gotten a huge quart of blueberries at the farm so I threw them in for good measure. Also, you can freeze the leftovers! Easy breakfast for the weekday rushes!<br />
<br />
<b>Blueberry Quinoa Cakes</b> (<a href="http://www.marthastewart.com/329047/quinoa-cakes">Adapted from Everyday Food</a>)<br />
<i>(Makes about 12 cakes)</i><br />
<ul><li>1 cup cooked quinoa</li>
<li>3/4 cup all purpose flour</li>
<li>1/2 tsp. coarse salt </li>
<li>2 tsp. baking powder</li>
<li>1 large egg, plus 1 large egg white</li>
<li>1 tbsp. unsalted butter, melted</li>
<li>1/4 cup nonfat milk</li>
<li>2 tbsp. pure maple syrup (more if you want to top the cakes with it)</li>
<li>2/3 cup fresh blueberries</li>
</ul>In one medium bowl, whisk together dry ingredients (quinoa, flour, baking powder, salt). In another bowl, whisk together egg, egg white, butter, milk, and syrup until smooth. Combine and fold in the blueberries.<br />

Spray griddle with nonstick butter spray. Heat over medium-high. Drop by heaping tablespoonfuls onto griddle. Cook until bubbles appear on top (about 2 minutes). Flip, and cook for just over a minute on the other side.
